This Cajun Gravy is a flavorful, spicy sauce inspired by Popeyes, perfect for adding a delicious kick to fried chicken, mashed potatoes, and biscuits.

Ingredients
  

  • 1/4 cup of vegetable oil
  • 1/4 cup of all-purpose flour
  • 1 cup of chicken broth
  • 1 cup of beef broth
  • 1 tablespoon of Cajun seasoning
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper
  • 1/4 cup ground beef Optional
  • 1/4 cup ground pork Optional

Instructions
 

  • Pour the vegetable oil into a medium pot and place it on the stove over medium heat. Let the oil warm up until it’s hot but not smoking.
  • Carefully add the flour to the hot oil, stirring constantly for 3-4 minutes until the mixture turns golden brown.
  • Slowly pour in the chicken and beef broths while whisking to mix everything smoothly. If you want, you can add ground beef and pork at this stage.
  • Add the Cajun seasoning, garlic powder, and onion powder. Stir the gravy frequently for 5-7 minutes, until it starts to thicken.
  • Taste the gravy and add salt or pepper if needed. Once it reaches your desired thickness, remove the pot from the stove and enjoy!

NOTES

  • Keep an eye on the roux; it should turn a nice golden brown, but be careful not to let it get too dark.
  • When adding the broths, pour them in slowly and keep whisking to prevent any lumps.
  • Taste the gravy as you go, especially after adding ingredients, to adjust the seasoning if needed.
  • If you want a spicier gravy, simply add a bit more Cajun seasoning.
