Ingredients
  

Meatloaf Ingredients

  • 1 1/2 pounds ground chuck
  • 2 eggs
  • 1 cup crushed Ritz crackers
  • 1/4 cup milk
  • 1/2 cup finely chopped white onion
  • 1/4 cup finely diced green bell pepper
  • 14.1 ounces diced tomatoes 1 can – drained
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Meatloaf Glaze

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard
  • 1 teaspoon Worcestershire sauce

Instructions
 

  • Preheat the Oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil to make cleanup easier.
  • Mix the Ingredients: In a large bowl, beat the eggs well. Then add the crushed crackers, chopped onion, diced green pepper, milk, salt, drained diced tomatoes, and pepper. Stir everything together until well mixed.
  • Add the Beef: Gently add the ground beef to the mixture and combine it well. Transfer the meat mixture to the prepared baking sheet and shape it into a loaf.
  • Bake: Place the meatloaf in the oven and bake for 30 minutes. After that, take it out and spread the glaze over the top. Return it to the oven and bake for another 30 minutes or until the center reaches 160°F (70°C).
  • Rest and Serve: Let the meatloaf sit for 5-10 minutes before slicing. Then serve and enjoy!
